Creole Pork Chops

Ingredients:

  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1/4 teaspoon ground cumin
  • 1/8 to 1/4 teaspoon cayenne pepper
  • 4 boneless pork loin chops (4 oz ea)
  • 2 tablespoons vegetable oil
  • 1 can (8 ounces) tomato sauce
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped celery
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon minced garlic

Directions:

  1. In a small bowl, combine the first six ingredients; rub over both sides of pork.
  2. In a large skillet, brown pork chops in oil over medium heat. Add the remaining ingredients.
  3. Cover and cook 15-20 minutes longer or until meat is tender.
  4. Yield: 4 servings.
